I’m going to let you all in on a little secret, when I start cooking or heaven forbid, baking (and posting recipes here or on the gram), it probably means my to-do list is out of control and I’m finding ways to avoid it. Because you know, if you avoid it long enough, it will just go the f%^&! away. So in the spirit of having just the right amount of energy to continue avoiding my long, completely overwhelming list of to-dos – I made little delicious balls of salty caramel ENERGY.
These are the perfect little treat to take with you whether you’re on the go, or for all those times you sneak out to the fridge after you’ve already had dessert (just me?).
No Bake Salted Caramel Protein Energy Balls:
- 1 1/2 cups rolled oats
- 1/2 cup Nuzest protein powder (smooth vanilla)
- 1/2 tsp cinnamon
- 1 T chia seeds
- 1/4 cup smooth natural peanut butter
- 1/4 cup Nutty Infusions™ Cashew Butter, Salted Caramel
- 3 tbsp natural honey
- 1 tsp vanilla extract
- 1/3 cup chocolate chips
- 1/3 cup chopped cashews
- 3 tbsp oat milk (or whatever milk!)
Instructions
Add rolled oats, protein powder, cinnamon, and chia seeds to a large bowl. Add in peanut butter and delicious, addictive salted caramel cashew butter (OMG so good), honey, and vanilla extract. Stir to combine. Add in chocolate chips and cashews. Mixture should be sticky but crumbly at this point. Slowly add in 1 tablespoon of oat milk at a time, and go ahead and use your hands to combine the mixture until it becomes one big, sticky ball that holds together. If your mixture is too dry, add more liquid but don’t overdo it or you’ll have a goopy mess on your hands. Roll into little balls and then place in the fridge to set for about 30 minutes. Store in your fridge until you’re ready to EAT.
