I don’t know about you but I’ve always liked the thought of eating ice cream for breakfast. In fact, one of my favorite childhood memories involves ordering a milkshake for breakfast when I was on a roadtrip with my step-dad (he asked me not to tell my mom about it, but of course I did). While the occasional breakfast milkshake certainly wouldn’t kill me, now that I’m an adult, I realize that it probably also won’t help me start my day with the energy I need to be successful.
But as any good ice cream lover would do, I found a loophole. I made an ice cream that is healthy enough to eat for breakfast! It’s not only delicious, it’s also dairy free, and chock full of protein. And the cherry on top? It’s SUPER easy to make!
When you need a break from the avocado toast or perhaps just have a hankering for a little ice cream, try this Chocolate Covered Strawberry Nice Cream Parfait. It’s loaded with good for you ingredients, packed with protein, fiber, and it’s cold, creamy and tastes like a decadent treat. And you don’t need an ice cream maker – just a food processor or blender and you’re good to!
Ingredients:
- 1 cup sliced frozen bananas
- 1/2 cup strawberries (fresh or frozen will work fine)
- 1 tbsp peanut butter (or whatever nut / seed butter you prefer!)
- 2 tbsp Nuzest Wild Strawberry Protein Powder
- 2 tsp unsweetened cocoa powder
- 1 tsp pure vanilla extract
- 1 tsp non-dairy milk (I used oat milk but almond, coconut or cashew would also work well!)
- Optional: Fresh strawberries, sliced (for topping and / or layering)
- Optional: Granola (for topping and / or layering)
Place bananas, 1/2 cup of strawberries, peanut butter, Nuzest protein powder, cocoa powder, vanilla, and non-dairy milk in blender or food processor and blend until smooth. Top with fresh strawberries and granola, if desired.
I love this recipe for breakfast but really also anytime of day when you need a sweet, cool treat. Plus, it’s a great healthy snack for kids. My little guy loves my Nice Cream Parfaits so much that I usually have to make a double batch just to make sure I actually get to have some!
