To keep up with my training for the Rock Tahoe half marathon while traveling, I’ve been logging a lot of miles in the early mornings the past few weeks. And since I’ve been at altitude, I’ve been burning a lot more energy. I’ve been coming back to the house feeling absolutely worked and hungry and my usual breakfast routines just haven’t been cutting it.
Admittedly, I am not usually much of a sweet tooth but lately I’ve been craving cool, sweet treats morning, noon and night. I am convinced it has something to do with running at altitude or perhaps its due to chasing Colby around. Whatever the reason, I’ve been on a real kick (and I’m not complaining about it one bit).
We had a bunch of fresh strawberries up at the cabin so I first started experimenting with strawberry nice cream parfaits that I could guiltlessly eat for breakfast after a run (check out the recipe here), and then it dawned on me that I could likely do the same thing with cold brew.
So here you have it, Cold Brew + Chocolate Nice Cream Parfait – healthy enough to eat for breakfast, delicious enough to enjoy for dessert!
Ingredients:
- 1 cup of sliced frozen bananas
- 1 tbsp peanut butter (or nut / seed butter of your choosing!)
- 2 tbsp Nuzest Coconut Coffee MCT Protein Powder
- 2 tsp unsweetened cocoa powder
- 1 tsp pure vanilla extract
- 1-2 tsp Cold Brew
- 1 tsp oat milk (or milk of choice – cashew, almond, or coconut milk would also work well!)
- Optional: granola for topping or layering (or both)
- Optional: chocolate chips for topping or layering (or both)
Place all ingredients in a blender or food processor and blend until smooth. Place in a cup and top with granola and chocolate chips, if desired.
