I was STARVING when I got home last night so decided to whip up some fajita bowls using the Beyond Meat chicken-free strips that I’ve been meaning to try and it turned out super yummy (and they were super easy to make!):
Here’s what I used:
- Mushrooms, sliced
- One red bell pepper
- Olive oil
- Chili powder (to taste)
- Salt
- Cayenne pepper (to taste)
- One can black beans rinsed
- Roasted sweet potatoes (they were already in my fridge)
- Cooked quinoa
- Beyond Meat Chicken-Free Strips
- Late July Sweet Potato Chips for delicious garnish (totally optional, of course)
Here’s what I did:
- Saute mushrooms and red bell pepper in a little olive oil and chili powder, salt and cayenne (to taste)
- Once veggies are almost cooked, add in black beans and already roasted sweet potatoes, heat until warm
- Saute Beyond Meat Chicken-Free strips for 2-3 minutes
- Add Chicken-Free strips to veggie mixture
- Serve over quinoa and garnish with delicious chips
