If you know me, or followed me at all throughout my pregnancy, you probably already know that I have a true love affair with tacos. I ate so many tacos while pregnant that I started a taco tally (if he hadn’t come early, I know I would’ve made it to 100).
Fortunately, my love affair didn’t end once Cobly came. In fact, I’m pretty sure it just intensified. Tacos are the perfect meal for new, busy moms as they are so easy to prepare, relatively healthy (depending on what you fill them with!), and easy enough to eat one handed.
Add when you add jackfruit to your weekly taco routine, it’ll make you feel all kinds of fancy (and it’ll wow your friends and family). Wow, she makes jackfruit tacos. How does she do it all? The reality is, it’s so easy and such a perfect and healthy meal, it’s almost hard to believe it’s real.
Healthy mom hack, FTW!
Here’s what I do:
Ingredients:
- Upton’s Naturals Chili Lime Carnitas Jackfruit
- One bell pepper (color of your choice)
- A couple handfuls of some kind of green, chopped (typically whatever I have on hand)
- Cilantro, chopped (probably about 1/4 cup)
- Shredded cheese, optional
- Tortillas or taco shells
Heat olive oil in a pan over medium heat, add your Jackfruit and sautee for about 5 minutes. Let cool slightly and then use kitchen scissors to shred (think pulled pork). Set aside. Heat olive oil in a pan, add bell pepper and sautee for a couple of minutes. Add greens and sautee for a couple more minutes or until tender. Add all ingredients to your tortilla or taco shell. AND EAT.
