I swear the folks at Sun Basket must be psychic. How else could they have known what a hectic week I was going to have? How could they have possibly known that I wouldn’t have time to meal prep over the weekend? How did they know I hadn’t made a trip to the grocery store in over a week? And how did they know I was going to be tired, hangry and in need of a quick dinner fix last night? Sun Basket, my husband thanks you….
I received my first box of Sun Basket meals yesterday and was first impressed with the recyclable packaging. You can literally send the box and its contents (ice packs, etc) back to them for reuse. Sun Basket, the environment thanks you.
After I got over the nifty packaging and started sifting through my box’o goodies, I felt like it was in a foodie’s wet dream: there were fresh veggies, beautiful recipe cards, and magic, wonderful words like cook time: 20 minutes, and Hodo Soy Tofu (um, yes please).
I certainly had no plans for dinner given I hardly looked up from my computer screen yesterday (unless you count the few minutes it took me to unload my Sun Basket box or the 20 minutes I dedicated to jogging with the puppy….) so having a Sun Basket meal saved me from a night that would have otherwise consisted of unhealthy takeout and hangry outbursts directed at my husband.
For my first Sun Basket meal, I made the Five Spiced Braised Tofu. I’ll be honest, I was a little skeptical about this first recipe given I don’t usually like five spice…but the king trumpet mushrooms and Hodo Soy Tofu were enough of a reason for me to give it the old college try. And I’m so glad I did. The ingredients were all so fresh. So yummy. And thankfully, not a typical five spicey taste.
Plus, the recipe was super easy to prep and make. Took me about 20 minutes just as predicted. And for someone as tired as I was, it didn’t require that much focus.
Overall, our first Sun Basket experience was a solid A! We’re very much looking forward to our next two meals – coming up warm quinoa salad, and ratatouille with freekeh. Mmmmm…..

July 2, 2015 at 10:54 amOooh Sun Basket does look yummy!!! We live in a really rural area but I tried a meal service once called Fork to Fit which does a lot of prep and delivery for athletes in the larger city area near us.
