Pizza is always a good idea and its especially a good idea when its quick, healthy and easy. In our house we do a lot of whole wheat pita pizza eating. Tonight’s pita pizzas were topped with spicy hummus, mushrooms, red bell peppers, and goat cheese.
Recipe is as follows:
- Preheat the oven to 400
- Slice your veggies
- Saute the mushrooms & bell pepper in a little bit of olive oil and seasoning (I used Pepper Plant All Purpose Seasoning) on medium heat for a couple of minutes or just until the mushrooms are a little more tender (don’t overcook your veggies!). If you want a crispier bell pepper (we always do), then throw it in at the very last minute and throw it in just long enough to soak up some seasoning.
- Spread spicy hummus onto pitas
- Scoop your veggie mix on to the pitas and then sprinkle with goat cheese
- Throw in the oven for 12-15 minutes
And voila. EAT THE PIZZA!
Stay Sweaty friends!
XOXO,
Jamie
