After a weekend full of amazing yoga and play with my girl Justine, spectating at the Gorge 50K and cheering on CJ, my favorite trail babe, I was pretty wiped out and admittedly behind on all the things come Monday morning.
I woke up early to teach hiit yoga first thing and noticed almost right away that we were out of bananas (noooooo!!!!!!). I grumpily left for class without my morning smoothie and somehow made it through the rest of the day without one. Wahhhhh. And since the day was so jam packed with teaching and catch up and all the things, I never made it to the grocery store.
Knowing I’d be without bananas for yet another morning, I decided to whip up some chia seed pudding – something healthy and semi smoothie like that doesn’t require bananas – and could be made in advance. Score.
And it turned out AMAZING. I’m enjoying it as we speak.
Ingredients:
- 2 cups coconut milk (I used the real stuff)
- 1/4 cup chia seeds
- 1/2 cup fresh strawberries
- 1/2 tsp vanilla extract
- 1 tbsp Amazing Grass Vanilla
- 3 tbsp maple syrup
Put all ingredients in a blender and blend until almost smooth. Pour into a glass (or mason jar) and refrigerate for at least 4 hours (overnight is great too!). And enjoy!
